Fluffy Yellow Butter-Cake



Makes 2 eight or nine inch cakes
Ingredients:

2 1/2 cup flour

2 Tbs. baking powder

1 cup butter

1 1/8 cup milk

3 eggs

1 cup sugar

1 tsp. salt (unless using unsalted butter, if so then adjust to 1 Tbs.)

Step 1: Seperate eggwhite from the yolk, set aside yolk. In a small bowl whip eggwhite until fluffy, set aside.
Step 2: In a large bowl combine all dry ingredients and stir together.
Step 3: Add the milk egg yolk and butter to dry ingredients and mix on medium until smooth.
Step 4: Preheat oven to 400 and grease pans.
Step 5: Into a large bowl pour previously beaten eggwhites (note: do not beat again) and then pour the batter in on top of the eggwhites. Now, fold eggwhites gently into cake, this causes the cake to be "fluffy".
Step 6: When oven has preheated pour batter into cake pans and insert them into the oven. For added effect, sprinkle colored-sugar over the top of the cakes before inserting them into the oven.
Bakes: 20-25 minutes

  1. Hey! I am not quite sure were to write to you at. I have 6 siblings. ( 5 girls and 2 boys) And I am the oldest. We are all homeschooled. I started blogging a couple of months ago. My Daddy goes on mission trips to Cambodia. We have an orphanage there. In fact he will be leaving to go over there in about a week. He is consedering moving there if it is the Lord's will.
